Asparagus Fiesta Potatoes

Cookware: Lifetime® 7 Quart Dutch Oven and Cover; Lifetime® 3 Quart Saucepan and Cover; Lifetime® 9 Inch Skillet and Cover

Ingredients:

  • 8 medium baking potatoes, scrubbed
  • 1¼ cups water, divided
  • 1-pound lean ground beef
  • 1 1¼-ounce packet taco seasoning mix
  • 3¼ cups cut asparagus
  • 1½ cups fresh or frozen whole kernel corn
  • ½ cup diced onion
  • ½ cup diced red bell pepper
  • 1 cup shredded low-fat Monterey Jack or Cheddar cheese
  • Nonfat sour cream, optional

In Lifetime® 7 Quart Dutch Oven over medium heat, arrange potatoes in single layer; sprinkle with 4 tablespoons water. Pierce each potato 2 or 3 times with a sharp fork. Cover and cook until the water seal forms and the cover spins freely. Reduce heat to low and simmer 45 to 60 minutes, until tender (cooking time depends upon size of potatoes).

Meanwhile, preheat Lifetime® 9 Inch Skillet over medium heat until several drops of water sprinkled in pan skitter and dissipate. Add ground beef; cook and stir until browned, breaking into small pieces. Drain grease. Add taco seasoning and ¾ cup water; mix well. Cover and cook until the water seal forms and the cover spins freely. Reduce heat to low and cook 4 to 6 minutes, until thickened.

About the same time, in Lifetime® 3 Quart Saucepan over medium heat, combine asparagus, corn, onion, bell pepper, and remaining 4 tablespoons water. Cover and cook until the water seal forms. Reduce heat to low and cook 7 to 10 minutes until asparagus is crisp-tender. Drain if necessary. Add meat mixture; toss to combine.

Cut a long slit in the top of the potatoes; fluff insides with fork. Top with asparagus and meat mixture; sprinkle each with 2 tablespoons cheese. Serve immediately with a spoonful of sour cream, if desired.

Bronze Mashed Potatoes

Ingredients:

  • 2 medium sweet potatoes, scrubbed, sliced ½-inch thick
  • 4 medium carrots, scrubbed, sliced
  • 4 tablespoons water
  • 1 tablespoon low-fat whipped margarine
  • ¼ cup evaporated skim milk, or reserved cooking liquid
  • ¼ teaspoon pepper
  • ¼ teaspoon nutmeg

In Lifetime® 2 Quart Saucepan over medium heat, combine sliced sweet potatoes, carrots and water. Cover and cook until the water seal forms and the cover spins freely. Reduce heat to low and simmer 12 to 15 minutes until sweet potatoes and carrots are soft; drain, reserving cooking liquid, if desired.

Peel sweet potatoes. In food processor fitted with S-blade, process sweet potatoes, carrots, margarine and milk until smooth and creamy (or use an electric mixer). Season with pepper and nutmeg; mix well. Serve hot.

  • 2 tablespoons light sour cream
  • 2 tablespoons grated Parmesan cheese

In Lifetime® 7 Quart Dutch Oven over medium-high heat, cook fettuccine according to package directions, omitting salt and oil; drain, return to Dutch Oven and keep warm.

In food processor, purée cottage cheese until smooth, about 1 minute; set aside.

Preheat Lifetime® 11” Skillet over medium heat until several drops of water sprinkled in pan skitter and dissipate. Add bacon; cook and stir until slightly crisped, about 5 minutes. With slotted spoon, transfer to small plate or bowl.

Hashed Brown Potatoes

Ingredients:

  • 4 medium potatoes, unpeeled, about 1 pound
  • ⅓ cup finely chopped onion
  • ⅛ teaspoon pepper
  • ⅛ teaspoon paprika
  • 1 tablespoon corn oil
  • Vegetable cooking spray, optional

Scrub and shred potatoes (unpeeled). Pat potatoes dry with paper towels. In large bowl, combine potatoes, onion, pepper and paprika; mix well.

In Lifetime® 11” Skillet over medium heat, preheat oil 2 minutes. Divide potato mixture into 4 portions, mounding each portion in hot pan. Flatten slightly with the back of a spoon or spatula.   • 3 cups water

Seed and fine chop tomatoes. Fine dice all other vegetables

Ingredients:

  • 1 teaspoon olive oil
  • 1 medium onion, finely chopped
  • 1 cup short grain rice
  • 1 cup sherry, or white grape juice
  • 1½ cups fat-free chicken stock
  • ⅛ teaspoon pepper

In Lifetime® 11” Skillet over medium heat, preheat oil 2 minutes; add onion and sauté 2 minutes. Add rice; cook and stir 2 minutes. Add sherry cook until sherry is absorbed, about 6 minutes. Add chicken stock; mix well. Cover and cook until the water seal forms and the cover spins freely. Reduce heat to low and cook 10 to 12 minutes, until rice is tender and stock is absorbed. Let stand, covered, 5 minutes. Fluff with fork; season with pepper and serve.

Stovetop Baked Potatoes

Ingredients:

  • 4 medium potatoes, scrubbed
  • 4 tablespoons water
  • ¼ cup nonfat sour cream or nonfat plain yogurt
  • 2 tablespoons chopped chives

In Lifetime® 9” Skillet over medium heat, arrange potatoes; add water. Cover and cook until the water seal forms and the cover spins freely. Reduce heat to low and cook 35 to 45 minutes, until tender.

With sharp knife, cut an X in top of potato; spoon 1 tablespoon of sour cream on top of each potato. Top with chives.

Sweet Potatoes & Apples

Ingredients:

  • 2 medium sweet potatoes, peeled, sliced
  • 4 carrots, scraped, sliced diagonally
  • 1 cup orange juice
  • 1 tablespoon brown sugar
  • 2 teaspoons grated orange zest
  • 1½ teaspoons cinnamon, divided
  • 1 teaspoon nutmeg
  • 2 apples, cored, cut into ½-inch slices

In Lifetime® 11” Skillet over medium heat, combine sweet potatoes and carrots. Pour orange juice over vegetables; sprinkle with brown sugar, orange zest, 1 teaspoon cinnamon and nutmeg. Cover and cook until the water seal forms and the cover spins freely. Reduce heat to low and cook 15 minutes. Arrange apple slices on top; sprinkle with remaining ½ teaspoon cinnamon. Cover and cook 20 minutes, until potatoes and carrots are tender.

If too much liquid remains when vegetables are tender, remove cover and simmer until most of liquid evaporates.

Walnut Lemon Couscous

Ingredients:

  • 1 tablespoon olive oil
  • ½ cup walnut pieces
  • 2 large cloves garlic, minced
  • ⅔ cup concentrated low-fat chicken stock
  • ¼ cup freshly-squeezed lemon juice
  • ½ cup thinly sliced green onions
  • ½ cup sliced black olives
  • 4 thin lemon slices, quartered
  • ¾ cup couscous
  • Salt and pepper to taste, optional

In Lifetime® 9” Skillet over medium heat, preheat oil for 2 minutes; add walnuts and garlic. Stir-fry 2 minutes. Add chicken stock, lemon juice, onions, olives and lemon pieces; bring to boil. Stir in couscous. Cover and cook until the water seal forms and the cover spins freely. Remove from heat. Let stand 5 minutes. Toss with fork; season with salt and pepper, if desired. Serve immediately.
